Super-quick gluten free, egg free pancakes

My neighbour Dawn and her husband Matt, who is allergic to wheat, sent in this innovative “quickie” pancake recipe that combines two ready-made pancake mixes.  The idea: each of the mixes has its flaws, but combined together in the right ratio result in a fluffy, delicious pancake that’s a hit with the entire family.

Here is Matt’s Secret Perfect Pancake Recipe:

“For those too lazy to make pancakes from scratch… here is an easy recipe for  gluten free, egg free, dairy free pancakes. No more gluten free ‘brick’ pancakes, but rather something that brings gluten free closer to the real thing.

  • ½ cup Bobs Red Mill gluten free pancake mix
  • 1 ½ cup Orgran Gluten Free apple and cinnamon pancake mix
  • 1 tsp Orgran Egg Replacer (or 1 egg)
  • 1 tbs oil
  • 1 cup milk or water (if you have a diary allergy)

The Orgran pancake mix doesn’t have enough salt in the mixture, and although the pancakes are light and fluffy they are too sticky.  Bobs Red Mill mixture is too dense.

Combine the Orgran to Bob (mix of 2:1) results in gluten free pancake that has the best of both worlds.”
